Skillet Sweet Potatoes and Spicy Sausage


I never thought of myself as a meat and potatoes kind of gal, but when my parents whipped up a breakfast full of the two ingredients, I was hooked. It’s a simple, easy breakfast to whip up if you’ve just gotten out of bed after a night of holiday partying. Not that that happened to me (just kidding, of course it did).

Skillet Sweet Potatoes and Spicy Sausages 

2 sweet potatoes, quartered into 1/4 inch slices
1 white onion, diced
1-2 spicy sausages sliced into quarter-sized pieces (best if from the Farmer’s Market)
1 tbsp. olive oil
2 tbsp. shredded cheese
Salt & pepper

1. Heat your skillet, I used my Lodge cast iron, on medium and pour in your olive oil and sweet potatoes. Cook the potatoes and olive oil for about 4-5 minutes.

2. Next, mix in your sausage and onions and sprinkle with salt and pepper. The onions should be cooked until translucent and the sausages should be cooked until they’re browned.

3. Once the potatoes are slight soft, sprinkle the cheese over the pan, remove from heat and enjoy!
