Welp, I head back to work today so this marks the end of long, thought-out breakfasts with ornate ingredients. Instead, it’s back to rushed breakfasts that can be eaten while walking (or running, depending on the morning). Knowing that I wanted something remotely healthy, something easy to carry, and semi-sweet (I like sweet breakfasts), I thought back to a breakfast bar I had noshed on at Blue Bottle Coffee. With super soft oats, sweet jam and a subtle savoriness to it, I knew I had to make something similar. For sweetness, I looked to my staple courtesy of Oakland-based, Blue Chair Jam and crumbled graham crackers c/o of this recipe of Lemon Meringue pie. For savoriness, I subbed in salted butter for unsalted butter (gasp!), which turned out completely fine. And of course, we can’t forget the star of the show – rolled oats. Make this over the weekend and have breakfast ready for the rest of the week!
Rolled Oat Bars with Blue Chair Jam
1 cup rolled oats
1 cup flour (either gluten-free or whole wheat)
1/2 cup brown sugar
1/2 cup salted butter, softened
3/4 cup graham cracker crumble
1/4 tsp. baking soda
3/4 cup of Blue Chair jam of your choice
1. Preheat your oven to 350 degrees and grease a foil-lined baking pan.
2. In a bowl, combine all of your dry ingredients together and mix in the melted butter. Withhold 1/4 cup of this mixture to the side.
3. Once your mixture resembles a crumb-like consistency, spread evenly across your baking sheet. Coat your oat-spread with Blue Chair jam and cover with the 1/4 dry mixture that you set aside.
4. Bake for 30-40 minutes or until it’s slightly golden brown. Cool for 30 minutes before cutting into small bars. Enjoy!
