Happy post-Mother’s Day everyone! It was so nice to head home for the weekend and do nothing but cook, eat, cook for my parents, and then eat some more. With a couple of naps thrown in there as well. For part of the Mother’s Day celebration, I was keen on making some finger foods for guests before the main course was served. I’ve been heavily craving some jerk shrimp, as well as dainty tea sandwiches so I decided to combine the two with this concoction called Jerk Shrimp Tea Sandwiches. Other name recommendations are now being taken. Follow the jump to get the recipe!
1/2 – 1 lb. of shrimp
1/2tsp. garlic powder
1/4tsp. red chili pepper flakes
Touch of olive oil
4 slices, white bread
1 small cucumber
1. Mix all of the seasonings together in a bowl and set aside.
2. Heat up the pan on medium and drizzle with olive oil.
3. Mix the shrimp with the spices and place into the pan, cook the shrimp for 1-2 minutes on each side until they’re pink and ready to eat.
4. Cut each slice of bread into three pieces and place a slice of cucumber and a shave of cheese on top, then a spicy shrimp to finish it off.
