After watching Chef Vivian Howard from A Chef’s Life fashion heirloom tomatoes into what looked to be a mouthwatering sandwich, I finally became open to the idea of eating sliced tomatoes. Typically, I only like my tomatoes when they’re spread on to pizza or puréed into pasta sauce. But since summer is starting to slowly wind down, I guess that there’s no better time to try something new.
I stopped by Bi-Rite to pick up almost all of the ingredients for this makeshift sandwich. Even though this probably cost around $10 to make, the insanely fresh and crisp ingredients made it so worth it.
Heirloom Tomatoes and Burratta Cheese Toast
1-2 ripe heirloom tomatoes
1 red onion, sliced
1/4 cup of fresh basil, sliced
1 clove garlic, minced
2 tsp. olive oil
Freshly cracked black pepper
1 fresh baguette
Fresh burratta cheese
1. Slice and mince all of the fresh veggies to make for easy assembly.
2. Mix the minced garlic with the olive oil and spread onto the sliced baguette.
3. Toast the baguette with the olive oil and garlic mix. From there, top with all of the veggies, cheese, salt, and pepper. Enjoy!
