It’s been a year and a little over one month since I last had bacon-wrapped figs, an appetizer that changed my life and made me dream of those little bites of savory goodness. Needless to say, I was determined to make a bacon-wrapped something -anything, this Christmas.
Thinking that Whole Foods would be open on Christmas (they weren’t) I looked forward to making these puppies. Instead, I had to improvise with the leftover bacon that we did have and some chunks of Pepper Jack cheese. My improvised recipe is as follows.
Bacon Wrapped Cheese
16 pieces of center cut bacon that’s halved
Cheese, a soft cheese probably wouldn’t hold up as long as a harder cheese
16 toothpicks, drenched in Olive Oil
1. Heat oven to 350º F.
2. Wrap the half-as-long bacon around your rectangular chunk of cheese and lay on an ungreased cookie pan (one with edges will work best, you don’t want grease to spill into your oven).
3. Place your bacon bites into the oven and bake until the bacon is thoroughly cooked and crispy!
4. Once out of the oven, stick your olive oil drenched in the bacon wrapped cheese and drizzle with balsamic vinegar.
